Easy Whole30 Taco Bowls

These Easy Whole30 Taco Bowls are clean, healthy and so full of flavor you won't even miss the shell. This easy to make meal will become a new Taco Tuesday favorite for the whole family. This gluten free taco bowl is easily doubled for extra leftovers too!

Tips for this recipe:

  • This make a solid 4 servings, but up to 6 - this recipe makes a good amount, but in full transparency it can make anywhere from 4-6 adult servings. I tend to eat one good sized bowl and am stuff. My husband can eat 1.5-2 bowls every time. Either way, this will easily feed a family of 4 but there will be no guarantee of leftovers.

  • It’s easy to double! - The good news is that this is easy to double, which is what I tend to do. This keeps really well in the fridge. You can even make and freeze it to have freezer meals on hand.

  • Add jalapeno if you like some spice - it’s totally optional, but if you like a little heat, I suggest adding some sliced jalapenos to the top. Hot sauce, like Sietes or Franks) is also great

  • Avocado is king - if you happen to find an avocado in the .3 seconds they are the perfect level of ripe, throw some slices on here!

  • Get a chopper! - we have been using one of these for literally 8+ years and it cuts prep time down immensely. I highly, HIGHLY recommend you get one for this/any recipe


WHOLE30 TACO BOWLS

INGREDIENTS:

2 lbs ground beef
2 (4 oz) cans mild diced green chiles
Taco seasoning to taste *recommended 1 pack per 1 lb beef
3 lg sweet potatoes, peeled & diced
1 lg green pepper, diced
1 lg red pepper, diced
½ lg red onion, diced
1 jalapeno, seeded & diced *optional
1 ½ tsp salt + additional to taste
1 tsp onion powder
1 tsp garlic powder
2 Tbsp coconut oil, butter or ghee
Avocado *optional for serving

INSTRUCTIONS:

  1. Melt 2 Tbsp butter or oil in a large pan. Add in sweet potatoes and cover. Cook on low-med for 10 minutes, stirring to avoid burning.

  2. In a separate pan, begin browning your ground beef. 

  3. After 10 minutes, remove the lid from your sweet potatoes and add in the pepper, onion and jalapeno (if using.)  Continue to cook for another 15 mins or until your veggies have softened.  Stir frequently to avoid burning.

  4. In your other pan, once your beef is fully cooked, drain out the fat and return the beef to it’s pan.  Add in taco seasoning, per packet instructions and the mild green chiles. Simmer per packet instructions until taco meat is done.

  5. While meat is simmering, season the sweet potato mixture with salt, onion powder and garlic powder.  Stir to combine. Leave on low heat to stay warm until the meat is done.

  6. Combine meat into your sweet potato mixture and stir. Then scoop to serve.  Alternatively, you can scoop the veggies onto your plate and top with the meat if you prefer. Top with jalapeno, avocado or some hot sauce and enjoy!
